This is the kind of dish that looks like it took all day but comes together in one pan in under 40 minutes. Shrimp, scallops, white fish, and clams all cook together in a savory passata and seafood broth, soaking right into fresh spaghetti. It's elegant enough for company and easy enough for a weeknight.
Ingredients
- 9 oz fresh spaghetti
- ½ lb white fish
- 6 scallops
- 12 large shrimp, peeled and deveined
- ½ lb chopped clams
- 16 oz seafood or fish broth
- ½ sweet onion, diced
- 4 oz cherry tomatoes, quartered
- 3 cloves garlic, chopped
- 12 oz passata
- 2.5 oz spinach, chopped
- 1 tsp salt
- ½ tsp black pepper
- ¼ cup Parmesan cheese
Directions
- 1Add onions and cherry tomatoes to a large pan over medium heat. Cook until onions start to turn translucent.
- 2Add chopped spinach and stir to combine.
- 3Add shrimp, scallops, garlic, and white fish. Cook for about 2 minutes.
- 4Add passata, chopped clams, and fish broth.
- 5Mix well and add in the fresh pasta. Cook pasta to desired consistency, stirring occasionally.
- 6Add Parmesan cheese and stir to incorporate.
- 7Plate and serve immediately.
Tips & Variations
- Fresh pasta cooks much faster than dried — keep a close eye on it and taste as you go to hit your preferred texture.
- Don't overcook the seafood in step 3 — it will continue cooking once the broth and passata are added.
- Passata is strained tomatoes — you can substitute a good quality tomato purée if you can't find it.
- Finish with a squeeze of lemon and fresh parsley for a bright pop of flavor.
