These little cookies are proof that simple ingredients can taste incredible. Dates do all the sweetening, cinnamon brings the warmth, and the raisins add little bursts of natural sweetness throughout. Make a batch on Sunday and you have a guilt-free treat ready all week long.

Ingredients

  • 4 oz pitted dates
  • 1 tsp vanilla
  • 1 tsp cinnamon
  • ¼ cup water
  • 1 cup quick oats
  • ¼ cup raisins

Directions

  1. 1Preheat oven to 325°F.
  2. 2In a food processor, blend dates, water, vanilla, and cinnamon until a smooth paste forms.
  3. 3Fold in the quick oats until fully combined, then fold in the raisins.
  4. 4Scoop onto a lined baking sheet and shape into cookies. Bake for 20 minutes.
  5. 5Refrigerate after cooking until ready to eat.

Tips & Variations

  • If your dates are dry, soak them in warm water for 10 minutes before blending — they'll blend much smoother.
  • These cookies firm up nicely in the fridge and keep well for up to a week in an airtight container.
  • Add a handful of chopped walnuts or pecans for extra crunch and healthy fats.
  • Swap raisins for dried cranberries or chopped dried cherries for a fun twist.
