Everything you love about a gyro — herby, juicy chicken meatballs, bright lemon orzo, crisp veggies, salty feta, and creamy tzatziki — served up in a bowl that's as beautiful as it is delicious.
Ingredients
- 1 lb ground chicken
- 1 tsp salt
- ½ tsp black pepper
- ½ tsp garlic powder
- 1 tsp onion powder
- 1 tsp dried oregano
- 1 egg
- 1 tbsp red wine vinegar
- 1 tbsp lemon juice
- ½ cup plain breadcrumbs
- Orzo, cooked as directed in salted water
- Juice of 1 lemon
- 2 tbsp olive oil
- Thinly sliced red onion
- Diced cucumber
- Diced tomatoes
- Kalamata olives
- Crumbled feta cheese
- Your favorite tzatziki
Directions
- 1Preheat oven to 350°F. Line a baking sheet with parchment paper.
- 2In a large bowl, combine ground chicken, salt, pepper, garlic powder, onion powder, oregano, egg, red wine vinegar, lemon juice, and breadcrumbs. Mix until just combined — don't overwork it.
- 3Roll into meatballs (about 1½ inches each) and place on the prepared baking sheet. Bake for 20 minutes until cooked through and lightly golden.
- 4While the meatballs bake, cook orzo in well-salted boiling water according to package directions. Drain and toss immediately with the juice of 1 lemon and 2 tbsp olive oil.
- 5To assemble: spoon lemon orzo into bowls, top with meatballs, then arrange red onion, cucumber, tomatoes, and kalamata olives around the bowl.
- 6Finish with a generous crumble of feta and a big dollop of tzatziki. Serve immediately.
Tips & Variations
- Don't overwork the meatball mixture — mix until just combined for the most tender result.
- Dress the orzo while it's still hot so it absorbs the lemon and olive oil beautifully.
- Make a double batch of meatballs and freeze half for an even faster weeknight dinner next time.
- Store-bought tzatziki works great, or make your own with Greek yogurt, cucumber, garlic, dill, and lemon.
