Bold lamb, sweet peppers, and a luscious cheese sauce come together in one pot for a dinner that feels indulgent but couldn't be easier.

Ingredients

  • 1 lb ground lamb
  • 8 oz pasta
  • 1 cup passata
  • 3 cups beef bone broth
  • 1 tsp salt
  • 1 tsp Italian seasoning
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ½ tsp black pepper
  • 2 tbsp heavy cream
  • ¼ cup sour cream
  • 1 cup cheese sauce
  • 1 red bell pepper, diced
  • 1 yellow bell pepper, diced
  • 1 red onion, diced
  • ½ cup shredded carrots

Directions

  1. 1Brown the ground lamb in a large pot or Dutch oven over medium-high heat, breaking it up as it cooks. Drain excess fat if needed.
  2. 2Add the salt, Italian seasoning, garlic powder, onion powder, and black pepper directly to the pot. Stir and let the spices cook for about 1 minute until fragrant.
  3. 3Add the diced red bell pepper, yellow bell pepper, red onion, and shredded carrots. Sauté for about 5 minutes, stirring occasionally, until the vegetables begin to soften.
  4. 4Pour in the passata and beef bone broth. Stir to combine and bring to a boil.
  5. 5Add the pasta and stir well to incorporate. Reduce heat to low, cover, and cook for about 20 minutes until the pasta is tender and has absorbed most of the liquid.
  6. 6Stir in the cheese sauce and mix until fully combined and melted throughout.
  7. 7Remove from heat. Stir in the heavy cream and sour cream until smooth and creamy. Serve immediately.

Tips & Variations

  • Use your favorite short pasta — rigatoni, penne, or rotini all work beautifully and hold the sauce well.
  • Ground beef or a beef-lamb blend can be substituted if ground lamb isn't available.
  • Stir in the cream and sour cream off the heat to keep the sauce silky and prevent curdling.
  • Leftovers reheat well — add a splash of broth to loosen the sauce when warming on the stovetop.
