Prep: 10 mins
Cook: 1 hour
Total: 1 hr 10 mins
Serves: 4–6
Difficulty: Easy
Everything you love about a burrito bowl — tender chicken, fluffy rice, black beans, and sweet peppers — all baked together in one Dutch oven with zero fuss. Just stir, cover, and let the oven do the work. Finish it with a drizzle of queso or a dollop of sour cream and dinner is done.

Ingredients

  • 3 chicken breasts, cubed
  • 1 cup uncooked rice, rinsed
  • 1 can black beans, drained and rinsed
  • 1 onion, diced
  • 1 red bell pepper, diced
  • 1 yellow bell pepper, diced
  • 1 can cream of chicken soup
  • 1 cup water
  • 1 tsp salt
  • 1 tsp turmeric
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • ½ tsp black pepper
  • ½ tsp coriander
  • Queso or sour cream, for serving

Directions

  1. 1Preheat oven to 350°F.
  2. 2Add all ingredients — chicken, rice, black beans, onion, bell peppers, cream of chicken soup, water, and all seasonings — to a Dutch oven. Stir well to combine.
  3. 3Cover with the lid and bake for 1 hour, or until the rice is cooked through and the chicken is tender.
  4. 4Serve topped with queso or sour cream.

Tips & Variations

  • ✦Rinsing the rice before adding it helps remove excess starch so it cooks up fluffy rather than sticky.
  • ✦Add a can of diced tomatoes or a cup of salsa to the pot for extra flavor and color.
  • ✦Top with shredded Mexican cheese, fresh cilantro, sliced jalapeños, or a squeeze of lime for a full burrito bowl experience.
  • ✦Leftovers keep well in the fridge for up to 4 days — reheat with a splash of water or broth to keep the rice moist.
