Boursin cheese melts into the broth and noodles to create the creamiest, most effortless one-pot dinner you'll ever make.

Ingredients

  • 3 chicken breasts, cubed
  • 16 oz egg noodles
  • 16 oz spinach, chopped
  • 1 package Boursin cheese
  • 4 cups chicken stock
  • 1 tsp salt
  • ½ tsp black pepper
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • Olive oil, to coat bottom of pan

Directions

  1. 1Preheat oven to 350°F. Coat the bottom of a large oven-safe pot or Dutch oven with olive oil.
  2. 2Add egg noodles, chopped spinach, cubed chicken, and chicken stock to the pot. Season with salt, pepper, garlic powder, and onion powder. Mix everything together well.
  3. 3Place the Boursin cheese in the center.
  4. 4Cover and bake at 350°F for about 50 minutes.
  5. 5Remove from oven, stir well making sure all uncooked noodles are submerged in the liquid. Return to oven uncovered for 10 more minutes until noodles are tender and sauce is creamy.

Tips & Variations

  • Any flavor of Boursin works great — garlic & fine herbs is a classic, but shallot & chive adds a nice twist.
  • Make sure to stir well at the 50-minute mark so all noodles get coated in the creamy sauce before the final bake.
  • Add a handful of frozen peas or sun-dried tomatoes for extra color and flavor.
  • Leftovers reheat beautifully — add a splash of chicken stock to loosen the sauce.
